Old Fashioned Ginger Cookies

The other day I made these delicious ginger cookies. They are really easy and quick to make and indeed the only time consuming task here is cutting the cookies into your desired shapes with a cookie cutter. But of course you can forego this step althogether by rolling the cookie dough into a log and cutting it into thin slices*.

  • 2 tbsp black treacle
  • 50g butter
  • 130g plain flour
  • 1/2 tsp soda
  • 1 tsp ground ginger
  • 1-2 tsp ground cinammon
  • 40g muscovado sugar
  • 1 egg
  • icing sugar
  1. Heat the treacle and the butter in a pot until melted. Put aside.
  2. Sift flour, soda, ground ginger, cinammon and sugar in a bowl.
  3. Pour the treacle mixture into the flour mixture and beat in the egg. Mix everything to form a soft dough. If the dough is too runny add more flour to make it thicker.
  4. Roll out the dough onto a floured surface and cut out shapes with cookie cutters*.
  5. Place the cut out shapes of dough onto a lightly greased baking tray and bake in a preheated oven (190C) for 10-12 minutes (be careful not to keep them in the oven for too long as they burn easily!)
  6. When the cookies are done, let them cool.
  7. Mix the icing sugar with some water to make it runny and drizzle over the cooled cookes. Let the icing set for twenty minutes or so.
